I don't think I've ever had Passionfruit Curd until I made it the other day, and boy was it yum! Far out I could eat that stuff by the (big) spoonful! I refrained however and saved it for the filling in some melting moments. Jacob said they were the nicest biscuits I've ever made, which made me happy.
Here is the super easy recipe for the deliciously sweet Passionfruit Curd:
Ingredients:
4 Eggs
170g Caster Sugar
125g Passionfruit pulp
100g Butter, chopped
1. In a large microwave bowl, whisk together the eggs and caster sugar until well combined.
2. Add passionfruit pulp and the butter.
3. Microwave on medium for 6-10 minutes, whisking it every minute until it becomes thick enough to coat the back of a spoon.
4. Pour into sterilised jars, seal and refrigerate.
Makes 1 3/4 cups.
